Wild Rice Casserole

1 lb. ground pork sausage with sage
3/4 cup all-purpose flour
1 tsp. thyme
1 tsp. salt
1 tsp. crushed black pepper
8 skinned and boneless chicken breast halves
1/3 cup vegetable oil
2 (.9 oz.) béarnaise sauce envelopes
1 14 oz. can artichoke hearts, drained and halved
1/3 cup chopped pecans
Garnishes; pecan halves, fresh sage sprigs
Serve with wild rice casserole (see recipe)

Preheat the oven to 325º

Brown sausage in a large skillet, stirring until it crumbles. Drain sausage and set aside. Discard drippings from skillet.

Combine flour, thyme, salt and pepper. Heat oil in skillet over medium heat. Add chicken to skillet and brown on both sides. Drain chicken and set aside.

Prepare béarnaise sauce according to package directions using the reduced calorie method; Keep warm. Spread sausage in a lightly greased 11x7x2 " baking dish. Top with chicken breast, artichokes, béarnaise sauce and pecans.


Bake for 20 minutes or until thoroughly heated. Garnish with pecans halves and fresh sage sprigs. serve with Wild Rice Casserole
 

Wild Rice Casserole

2 (6oz.) packages long-grain and wild rice mix
1 (8 oz.) jar process cheese spread
1 (8 oz.) can sliced water chestnuts, drained
1 (6 oz.) jar sliced mushrooms, drained
1 ( 2oz.) jar diced pimiento, drained
1 (2.8 oz. can French fried onions crushed

Cook rice mix according to package directions.
Stir in cheese spread and next 3 ingredients. Spoon into a lightly greased 11x7x2 " baking dish.
Cover and bake at 325 for 20 minutes; uncover and sprinkle with crushed onions. Bake uncovered , 10 additional minutes.
