1 1/3 cups water, heated to 110º
3 1/4 cups flour
2 tablespoons instant yeast
3 tablespoons brown sugar
1 ounce shredded cheddar cheese
1 tablespoon sea salt
4 quarts boiling water
2 tablespoons baking soda

Directions:
In a small bowl add brown sugar, yeast to heated water. Mix, set aside until.frothy. In a large mixing bowl, add flour. Using a mixed with a dough hook attachment, add in yeast mixture. Knew on low for 5 minutes. You want a soft dough ball to form. You may need to add extra flour to achieve this. Cover bowl and let rise 1 hour in a warm area. On a lightly floured surface then dough out and divide into 6 equal portions. Roll each portion into a 12" rope. Take each rope and twist together. In pot of boiling water, add the baking soda . Boil each twist for 10 seconds and drain on paper towels. Preheat oven to 425º. On a silicone lined baking tray place your boiled twists. Sprinkle 3 twists with sea salt and 3 with cheese. You can make them all salt or all cheese. You just need to shred more cheese if you opt to make them all cheese. Cook for 15-20 minutes infinitely golden brown.
