⅓ c. olive oil
2 small dried red chilies,each broken into 3 pieces (or can use red pepper flakes, a few shakes - the spicier you like it, the more you shake)
2 cloves garlic, minced or pressed
˝ tsp. salt
˝ c. chopped fresh parsley
8 oz. medium-wide noodles (spaghetti noodles work fine, too)
FRESHLY grated parmesan

Start cooking your pasta in a pot of boiling salted water until al dente (follow pkg directions.).
While the pasta is cooking, heat the oil in a small pan over low heat. Add chilies and cook until they begin to brown. Add garlic and cook for about 30 seconds more, or just until limp (do not brown). Add salt and parsley and cook, stirring occasionally for 1 minute more. Remove from heat.
When pasta is al dente, drain well (do NOT rinse). Spoon hot sauce over noodles and toss noodles gently. We have actually made the “sauce” in a sauté skillet, and when the noodles are done, toss them in the skillet, then putting them in the serving bowl. Serve with the grated or shaved fresh parmesan.
