2 pound pork shoulder
1 cup.yellow onion, chopped
8 cloves garlic, chopped
2 teaspoon cumin
1 tablespoon olive oil
2 teaspoon smoked Spanish paprika
1/2 teaspoon red pepper flakes
1/4 cup Cuban Sofrito
15 ounce can diced tomatoes
1 teaspoon salt
2 cups cooked black beans
2 cups cooked white rice
1/2 cup red onion, diced
1 avocado, diced

Directions:
Directions:
Brown (room temperature) pork shoulder in oil in large stock pot over medium high heat.Place browned pork into slow cooker. Deglaze pan with can of tomatoes. Add to cooker. Add all other ingredients except rice, beans, red onion and avocado. Cook on high for 6 hours. Remove pork and chop meat. Return to cooker and stir. Place by adding rice and beans then pork with sauce and top with red onion and avocado.
