Ingredients: For the sauce: 18 ounce pineapple blend juice/ I used Dole brand 2/3 cup sugar 3/4 cup white vinegar 2/3 cup ketchup 2 teaspoon ginger powder 3 tablespoons soy sauce
For the batter: 2 teaspoons salt 2 cups club soda 1 1/4 cup corn starch 1 1/4 cup flour 1 tablespoon each of baking powder, onion powder, garlic powder For the chicken: 1 pound boneless, skinless chicken breast cut into 1" pieces 3 cups vegetable oil

Directions:In a large saucepan add all of the sauce ingredients and cook over medium heat for 10 minutes. Keep stirring so bottom doesn't burn. Set to simmer and cook another 10 minutes. Take 1 tablespoon of sauce out and set aside. Take 1 tablespoon of cornstarch and mix with the 1 tablespoon of sauce. Mix until smooth. Add into sauce to help thicken it. You may repeat until sauce is a thicker consistency. In a large bowl add all ingredients for batter. Mix, set aside. Heat oil up in deep pot. Take chicken and dip into batter then drop into oil. Cook chicken for 3-4 minutes until golden. Drain on paper towels. Set out sauce into small bowls and dip away. |
