1 c. brown sugar
1 c. granulated sugar
1 c. shortening
2 eggs, beaten
2 c. flour
½ tsp. salt
1 tsp. soda
1 tsp. baking powder
1 tsp. vanilla
1 c. shredded or flaked coconut
3 c. quick-cooking oats
½ c. chopped nuts

Directions:
Directions:
Cream the sugars and shortening until fluffy. Add eggs. Sift dry ingredients, and add to creamed mixture. Add the vanilla, coconut, oats, and nuts. Mix well. Chill several hours.
Shape into dough balls, and flatten (use coarse end of meat hammer for a quick method that leave a waffle pattern when baked). Can sprinkle with colored sugar.
Bake at 375º for 8 minutes.
