8 large eggs, beaten
1/2 cup finely diced onion
1/2 cup grated cheddar cheese
2/3 cup finely chopped Canadian bacon
1 teaspoon butter
1 tablespoon chopped fresh chives
Salt and pepper to taste
1/2 teaspoon hot sauce

Directions:
Directions:
In a skillet pan set on medium low, add butter. When butter melts, add onions. Leave them to cook slowly and caramelized for 10 minutes. Stir and cook until golden colr. Remove from pan and set aside in large bowl. Add Canadian bacon to pan and cook until crispy. Add remainder of ingredients to bowl containing onions. Add bacon. Preheat oven to 350º. Grease 12 muffin cups and divide mixture amongst them. Cool almost to top. Bake 20-30 minutes or until eggs are just set.

Tasty little breakfast bites and so easy to make. Whip up a batch and enjoy a cup of coffee while they bake. Serve with fresh fruit and you have a delicious breakfast or brunch.
