2 pounds stew meat. I prefer London broil cut into 1" pieces
1/4 cup flour
2 tablespoons vegetable oil, divided
1 large onion thinly sliced
2 tablespoons smoked paprika
2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
28 ounce can crushed tomatoes
2 teaspoon tomato paste
1 1/2 cups beef broth
1/4 cup sour cream
1 pound bag egg noodles cooked according to package directions

In a bowl mix flour and beef cubes. In a heavy stock pot, I like fast iron for this, heat half of the oil over medium heat. Brown meat in small batches. Remove meat from pan and add rest of oil and lightly brown onions. Mix in tomato paste. Cook 1 minute. Stir in salt, pepper, garlic and paprika. Stir in can of crushed tomatoes and beef broth. Lower heat to simmer. Scrape bottom of pan getting up all that fond....Cooked bits on bottom of pan. Place beef back into pot. Cover and simmer 1 hour 45minutes until meat is tender. Stir occasionally. Finish sauce by stirring in the sour cream. Serve over cooked egg noodles.

My mom made this when I was a kid. Each night when she put away the leftovers I'd sneak in and steal the meat. It was soooo good. I always got into trouble the next day when she discovered that leftovers were just noodles and sauce. It was worth it😁
