1 cup heavy cream, room temperature
1 cup sugar
2 tablespoons water, room temperature
2 tablespoons light corn syrup

In a large, deep pot, set over high heat, add sugar, water and corn syrup. Whisk constantly until a light to medium golden brown color. Keep a close eye as it can burn quickly. Add cream. Be careful as mixture wants to boil up and overflow. Whisking vigorously helps to prevent this. (This is an extremely hot liquid and can burn you seriously if not handled with care). Remove from heat and let cool. Pour over your favorite ice cream or dessert. To store, put demanded in a glass container. Store in refrigerator tightly covered for up to a week.
