1 cup water heater to 110º
1 tablespoon honey
1 1/2 teaspoon dry active yeast
3 1/2- 4 cups flour
1 teaspoon salt
2 tablespoons olive oil
5 ounce room temperature beer. I used Heineken

Mix yeast and honey and water in a small bowl. Set aside until it becomes foamy, about 5 minutes. In large mixing bowl mix 3 cups of flour with salt. Add in yeast mixture, olive oil and beer. Mix with mixer using dough hooks. Knead until dough is no longer sticky. Add more flour a little at a time to achieve this if necessary. Knead dough for an additional 5 minutes. Place dough in an liked bowl and cover. Keep in warm place to proof for 1 hour. Roll dough out on a baking tray to desired size. Usually 12" round. Top with sauce, cheese and favorite toppings. Cook pizza in a preheated 425º oven.

For taco pie cook 1 pound lean ground beef using a taco seasoning packet. Mix into cooked meat 2 cups black beans, 8 ounces freshly shredded cheddar cheese. Take dough a roll it out to fit a deep dish pie pan. I use a 10" round cheesecake pan. Push dough up sides of pan. Put in meat and cheese mixture. Chop 4 Roma tomatoes into small dice. 1/2 cup chopped red onion. Place over meat. You can add refried beans on top of that. Bake 20-25 minutes at 425º. Once out of oven add chopped ice berg lettuce, taco sauce, sliced avocados and sour cream. Voila

Make a couple of batches at a time. Freeze uncooked dough. This in refrigerator before using. Having extra dough on hand makes this quicker and simpler than take out. Just about everyone who's tried this dough loves it. I use this recipe to make deep dish taco pie.
