2 boneless skinless chicken breast, about 6 ounces each
4 scallions
1/3 cup kalamatta olives with 2 tablespoons of it's bottles liquid
1/2 teaspoon salt
1/2 teaspoon garlic powder
2 fresh sprigs of rosemary
1 tablespoon olive oil
4 tablespoons of pesto, freshly made of store bought
2 medallions of goat cheese, 1 ounce each

FINISHING TOUCH
2 large naan bread, warmed

Directions:
Directions:
Take salt and sprinkle over each side of chicken. In a large saute pan add olive oil and heat over medium heat. Once oil is not add the chicken breasts. Slice scallions leaving top green portions to the side. Add scallions to the pan. Sprinkle garlic over chicken.Add olives and liquid and rosemary. Let cook 6 minutes undisturbed. Flip chicken and spoon pesto evenly over each portion.Turn heat to medium low and cover pan. Cooked an additional 4-5 minutes. Uncover and place medallions of goat cheese on chicken and let heat from pan gently melt it. Serve chicken alone or over nana bread. Spoon pan juices and olives over each piece.
