1 extra large yellow onion, it should equal 1cup when cooked down
1 tablespoon butter
1 cup steamed broccoli, finely chopped
4 large eggs, well beaten
1 1/2 tablespoon all purpose flour
1 1/2 cup half and half
3/4 cup shredded muenster cheese
1teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon fresh chives, chopped
1/4 cup grated asiago cheese
1 9" pie crust. Frozen or fresh

Preheat oven to 450º. In a large pan add butter and melt over medium heat. Add onions and stir. Turn heat to medium low. Cook slowly to caramelized onions. About 15 minutes. Once caramelized set onions aside. In a bowl add 1/2 & 1/2, flour, muenster cheese, eggs, chives and seasonings. Mix well. Add in onions and broccoli. Mix well. Pour mixture into prepared pie crust. Sprinkle asiago cheese over top. Place on a baking tray in case it overflows while baking. Bake for 20-25 minutes until golden brown. Cool 15 minutes before slicing.

You can keep this as a full vegetarian meal and serve with a side salad or for any meat lovers, grill up some chicken to serve on the side for a heartier meal.
