1 qt Chapped Clams in juice
1 medium onion
2 eggs
3 1/2 sleeves Ritz Crackers, crushed
1/2 teaspoon salt
1/2 teaspoon pepper
Flour
Butter or olive oil for frying


Directions:
Directions:
In a large bowl, mix clams, onion, crackers, salt and pepper. The mixture should be fairly wet but can be made into 1/4 inch thick patties. Roll patties in flour and pan fry them in oil or butter over medium heat until brown on each side. Drain cooked patties on paper towel and serve with tarter sauce.
