1/2 cup of sugar
1/2 cup of packed brown sugar
3 TBS of all-purpose flour
1 tsp of ground cinnamon
1/4 tsp of ground ginger
1/4 tsp of ground nutmeg
6-7 cups of thinly sliced and pealed tart apples
1 TBS of lemon juice
Pastry for a double pie crust
1 TBS of butter
1 large egg white
Additional sugar

Directions:

In a small bowl, mix the sugar, flour and spices, set aside
In a large bowl mix apple with lemon juice (prevent browning of the apples)
Combine sugar mixture with the apples and toss to coat evenly

In a 9" pie plate with bottom crust; trim even with the edge. Fill with apple mixture, dot with butter.

Roll remaining crust to fit the top of the pie, place over the filling. Trim and pinch the edges to seal.
Cut several slits in the pie crust.

Beat egg white till foamy, brush over the crust, sprinkle with sugar

Cover edge of crust with foil (prevent burning)

Bake at 375 F for 25 minutes, remove foil and bake until the crust is golden brown and filling is bubbly.

Cool for 20-25 minutes on a wire rack
