1 pound, 93% lean ground beef
1 tablespoon vegetable oil
2 large green bell peppers, seeded and rough chop
1 cup white onion, diced
10 large pimento stuffed Spanish olives, chopped
4 large Roma tomatoes, rough chop
3/4 cup beer broth
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon garlic powder
1 tablespoon mild chili powder
1/4 teaspoon ground black pepper
1/3 cup fresh cilanto, rough chop
1 tablespoon freshly squeezed lime juice

In a large stock pot over medium heat add oil. Once oil gets hot add ground beef and cook until no longer pink. About 5 minutes. While cooking, break beef up into a crumbly texture. Remove beef and set aside in a bowl. Add fresh vegetables and Saute in same stock pot that you cooked beef in. Saute 3 minutes. Add spices except cilantro and like juice. Return beef to pot and add olives and beef broth. Stir. Power heat to medium low. Cover pot and simmer half an hour. Uncover. Stir. Add in cilantro and lime juice. Remove from heat.
You can also add freshly chopped red onion on top of each dish. That's the Cuban way.

Serve over white rice. A warm, flavorful chili. Want beans, you can add drained and rinsed canned black beans towards end of cooking. Make this your own. Enjoy.
