Blueberry Crumb Bars


Ingredients:

1 cup white sugar
1 tsp. baking powder
3 cups all purpose flour
1 cup butter plus 2 tbsp. or*
1 egg
¼ tsp. salt
½ tsp. cinnamon (optional)

Coating for blueberries:
½ cup white sugar
3 tsp. cornstarch

4 cups fresh blueberries
*½ cup shortening + ½ cup butter plus 1 tbsp.

Directions:

1. Preheat oven to 375º. Spray a 9x13 inch glass pan with baking spray.
2. In a medium bowl, stir together sugar, flour, baking powder, salt and cinnamon.
3. Use a pastry cutter to blend in the butter and egg. Dough will be crumbly.
4. Place half the dough into the prepared pan and pat down.
5. In another bowl, stir together coating ingredients. Gently mix in the blueberries.
6. Sprinkle the blueberry mixture evenly over the bottom crust.
7. Crumble remaining dough over the berry layer.
8. Bake for 45 minutes, or until top is slightly brown. Cool completely. Cut into squares.
 

Blueberry Pie Bars

1½ cups all-purpose flour
1 cup light brown sugar
2 cups rolled old fashioned oats
1 cup ground graham crackers
1½ cups butter, melted
1 tsp. salt

2½ cups fresh blueberries
2 tbsp. sugar
2 tbsp. fresh lemon juice
1 tsp. cornstarch

1. Preheat oven to 375º. Line a 9x13 inch glass baking dish with parchment paper.
2. In a mixing bowl, blend flour, brown sugar, oats, graham crackers, melted butter and salt.
3. Set aside 1 cup of this crumble mixture.
4. Press remaining crumble mix evenly in the bottom of prepared pan.
5. In a small bowl, blend blueberries, sugar, lemon juice and cornstarch.
6. Pour blueberry mix over the crust and top with the reserved crumble.
7. Bake 35-40 minutes. Cut into squares and serve with a scoop of vanilla ice cream.
 

Blueberry Sauce

⅓ cup sugar
1 tsp. cornstarch
¼ cup water
2 cups fresh or frozen blueberries

Directions:

1. In a medium saucepan combine sugar and cornstarch. Add water; mix well.
2. Add blueberries. Cook and stir over medium heat until mixture is slightly thickened
and bubbly. Cook and stir 2 minutes more.
3. Mash with a potato masher (mixture will not be completely smooth).
