Slice cucumbers and onions and cover with salad dressing.

Cucumber salad was often eaten over mashed or fried potatoes.

*As with many recipes, Lizzie did not measure ingredients, she just knew how it should be. Suggested measurements: ½ cup each of Miracle Whip and milk or cream, 2 1/2 t. sugar, 1 t. vinegar and dash of salt and pepper. These are my measurements according to my memory of how it tasted. So if your memory or preference is different, you can always make adjustments like Lizzie did.-Rachel
