2 pounds salmon fillets
⅔ cup maple syrup (must be real maple syrup)
⅓ cup soy sauce
¼ cup packed brown sugar
2 tbsps. grated fresh ginger

Directions:
Directions:
Whisk together maple syrup, soy sauce, and brown sugar for marinade. Add grated ginger and black pepper to taste.
If desired, reserve a small amount of the marinade for serving with the cooked salmon. Place the rest in a resealable plastic bag with salmon fillets, or pour over salmon in a glass dish and cover with plastic wrap. Marinate overnight in refrigerator.

Preheat oven to 400º. Place salmon skin side down on foil-lined baking sheet. Bake until center of salmon is opaque, about 15-20 minutes, depending on thickness of fillets. If using reserved marinade for sauce, pour into salmon and heat. Thicken with a little cornstarch dissolved in water if desired.
