1 tbsp. olive oil
1 lb. ground pork
1 lb. ground beef
1 onion chopped
1 large green pepper, chopped
1 large red pepper, chopped
1 tsp. paprika
½ garlic powder
¼ red pepper flakes
1 tbsp. dried dill
½ tsp. salt or to taste
¼ tsp. pepper or to taste
½ cup rice uncooked
1 cup chicken broth, low sodium
small can diced tomatoes
1 cup cheddar cheese, shredded
1 tbsp. parsley
sour cream for serving

Directions:

Heat the oil in large skillet over medium-high heat. Add ground pork and ground beef; brown and crumble the meat.
Cook until the meat is no longer pink.

Add onion and peppers to skillet. Stir in the paprika, garlic powder, red pepper flakes, dill and season with salt and pepper. Then add rice, chicken broth and can tomatoes. Continue to simmer until rice is cooked (add more broth if needed). If desired, add cheese and parsley until cheese is melted. Then serve.
