3 Haas Avocados halved, seeded, and peeled
1 lime juiced
1/2 tsp Kosher salt
1/2 tsp ground cumin
1/2 tsp cayenne pepper
1/2 medium onion diced (more if you like it chunk vs. pasty)
1/2 jalapeno diced (de-seed and de-vein if you want it less spicy) (you can use the whole jalapeno if desired)
2 Roma tomatoes seeded and diced. (if you don't remove seeds from tomatoes this will turn out runny
1 tbsp chopped cilantro
1 clove garlic minced

Directions:

In a large bowl place the scooped avocado pulp and lime juice, toss to coat.
Drain and reserve the lime juice, after all avocados have been coated.
Using a potato masher add the salt, cumin, and cayenne and mash.
Then fold in the onions, tomatoes, cilantro, and garlic. Add one tbsp of the reserved lime juice and mix.

Let it sit at room temperature for one hour and then serve.

Similar to the story with the Pico De Gallo. Rob was having trouble finding Guacamole he liked. I developed this recipe to be chunky and spicy. When he's in the mood for really spicy I chop up a serrano pepper and throw that in as well.
