1 box gluten-free lasagna
1 small onion, chopped
3 carrots, shredded
2 cloves garlic, minced
3 small zucchini, chopped
1 pkg. frozen spinach, thawed and drained
2 cups fresh ricotta cheese
2 cups grated mozzarella cheese
½ tsp. salt
½ tsp. oregano
1 tbsp. parsley
jar of pasta sauce
olive oil

Directions:
Directions:
Preheat oven to 375º. Cook noodles to according to package directions unless they are oven ready.
Saute carrots, zucchini, onion, spices and garlic in oil until just tender.
Mix cheeses together.
Spread some tomato sauce on the bottom of 9x9 baking dish. Layer of noodles. Layer half the vegetable mixture.
Then 1/2 your cheese mixture. Layer of noodles. Half the pasta sauce. Layer of spinach. Remainder of vegetable mixture. Layer of noodles. Half the pasta sauce. Remaining cheese mixture
