2 leaks
12 to 15 cloves garlic, peeled
2 tablespoons oil
7 cups chicken broth
1 teaspoon salt
6 to 8 potatoes peeled, in 1-inch cubes

Directions:
Directions:
Trim leeks, slice and rinse well. Heat oil in a Dutch oven; add leeks and garlic. Sauté for 3 minutes or until soft. Add remaining ingredients; bring to a boil. Cover; reduce heat and boil gently for 30 minutes. Push soup through a food mill or place solids only in a food processor to puree.
