½ cup heavy cream
½ cup milk
¾ cup dark brown sugar
1 teaspoon cinnamon
½ teaspoon ground ginger
⅛ teaspoon ground cloves
3 eggs, lightly beaten
2 tablespoons applejack or hard apple cider
1 ½ cups pureed pumpkin
1 unbaked pie shell

Directions:

Preheat oven to 350°F. In a large mixing bowl, combine cream, milk, sugar, cinnamon, ginger, and cloves. Stir thoroughly; add the eggs and the applejack. Stir in pumpkin. Carefully pour into the pie shell. Bake for 40 to 50 minutes in the center of the oven until the filling is firm and the center of the pie barely quivers when the pie pan is gently moved back and forth.
