1½ pounds of PEI blue muscles
½ cup of dry white wine
2 garlic cloves chopped
1 tbsp olive oil
1 tbsp butter
1 tbsp bread crumbs
Juice of half a lemon
1 tbsp chopped fresh parsley

Directions:
Check the muscles over by taping them and if there are any cracked ones or they don’t close discard them. Lightly sauté chopped garlic cloves in melted butter and olive oil in a pot. Add wine and bring to a boil. Add muscles and cover till they open. About 5 minutes. Squeeze the lemon juice in and sprinkle bread crumbs and parsley all over. Serve with bread of your choice to dip in the liquid and use the shells to scoop and slurp the brine.

You don’t want to over cook the muscles or they will get rubbery. We had these at the Slater Hotel in Durango when we visited Marlis there in 2012 and I’ve been making them at home ever since.
