1 c. raisins
½ c. spiced rum
1 c. all-purpose flour
½ tsp. cinnamon
½ tsp. baking soda
¼ tsp. salt
½ c. unsalted butter, room temp
¼ c. sugar
½ c. dark brown sugar
1 large egg
1 tsp. vanilla extract
1-½ c. old fashioned rolled oats

Directions:
Directions:
Combine raisins and rum and let sit for 24 hours. In stand up mixer with paddle attachment cream butter, brown sugar and granulated sugar until well combined. Add the egg and vanilla and mix until fully combined. Sift together the flour, cinnamon, baking soda and salt. Slowly add and continue mixing until just combined making sure to scrap down the sides. Don’t over mix. Add the oats and raisins and mix until combined. Cover the dough tightly and refrigerate for 30 minutes. Preheat oven to 350. Line two large baking sheets with parchment paper. Once the dough is chilled scoop out 2 Tbsp. sized balls onto cookie sheet about an inch apart. Bake for 10-12 minute or until the edges of the cookies are lightly golden brown and the tops are set. Cool on a wire rack and enjoy!!
