Ingredients:  
Ingredients:  
Olive oil [if necessary]
Onions and Peppers [Frozen or Fresh]
Sweet potatoes - 3/4-1 inch cubed
Spinach [Frozen or Fresh (Fresh is better)]
Bacon [Cook separate and cut up]
Minced Garlic
Tomatoes [Cut-up]
Pepper, Italian, Cayenne, Other Spices to taste
Cheese [Cheddar, Mozzarella, Combination]

Directions:
Directions:
In a skillet on medium heat:
Cook the bacon
Remove bacon but leave some grease in the pan
Add the sweet potato cubes - cook to soften turning often
Add the garlic, onions, tomatoes, spinach and peppers to soften stirring often
Heat oven to 350 degrees
In a casserole dish combine ingredients
Add spices
Scramble 2-3 eggs w/ milk and add to casserole [more if needed]
Bake for 15-20 minutes
Add cheese and bake til cheese is melted
Let stand for a few minutes and serve hot
