2 lbs. large shrimp (cooked, peeled and deveined)
1 cup celery (diced into ¼ inch pieces)
3 t. fresh tarragon leaves (diced)
2 cups Blush Dressing. (See recipe below.)
Dash salt
Dash pepper
2 cups romaine leaves (finely shredded tender inner leaves)
2 cups mixed red and green seedless grapes (halved crosswise)
6 ripe plum tomatoes (seeded and cut into ¼ inch pieces)
½ cup papaya (diced into ¼ inch pieces)
3 t. chives (snipped for garnish)

Directions:

Cut the shrimp in half crosswise and remove the tails. Place in a large bowl and add the celery and tarragon. Toss well.
Fold in 1 cup of the Blush Dressing. Season with salt and pepper.
Assemble the shrimp cocktails by first placing 1 t. of the remaining dressing in the bottom of each of the 8 martini glasses. Add a generous ¼ cup shredded lettuce to
each glass.
Divide the shrimp mixture evenly among the glasses.
Top with the grapes, tomatoes and papaya. Dollop each glass with 1 t. dressing and
sprinkle with the chives and serve immediately. Gourmet Style.

Blush Dressing: 2 cups prepared mayonnaise, ¼ cup ketchup, 3½ t. fresh lemon juice and 1 t. Worcestershire sauce.
Combine all of the ingredients in a bowl. Makes 2½ cups of Blush Dressing.
