2 tbsp corn starch
3 cups rhubarb cut up in small pieces
1 1/2 cups sugar
2 tbsp vanilla

1 1/2 cups quick oats or old fashion oatmeal
1 cup shortening
1/2 cup nuts
1/2 tsp baking soda
1 1/2 cups flour
1 cup brown sugar

Directions:
Directions:
1. combine the rhubarb and 1 1/2 cups of sugar in a sauce pan and cook until done
2. dissolve the corn starch in a little water, pour into the cooked rhubarb and thicken. Add the vanilla and let cool.

3. in a large bowl cream the brown sugar and shortening.
4. mix together the flour and baking soda and this to the creamed brown sugar/shortening along with the nuts and the oats. Put 3/4 of this mixture in a 9 x 13 pan.
5. Pour the cooled rhubarb recipe in the pan
6. sprinkle the rest of the oat/sugar mixture on the top
bake 30 - 35 minutes at 350º
