2 cans of fire roasted tomatoes
1 teaspoon of sugar
1 clove of garlic, minced
1/2 of a medium onion, minced
olive oil
1 sleeve of Ritz crackers, crushed
1/2 cup of shredded cheddar cheese
2 Tablespoons of butter
salt and pepper to taste

Directions:
Directions:
Saute' the onion and garlic in the olive oil. Add to the drained tomatoes, sugar, and salt and pepper. Place in 8X8 glass pan or a similar casserole. Melt butter, mix in crackers and cheese. Top tomatoes with cracker mixture and broil until golden on top.

The owner gave me the recipe from an old handwritten book with papers shoved in it all which ways. She said it was her grandmother's recipe, modified a bit.
