Sweet Potato Souffle Recipe

Souffle:
3 cups cooked and mashed sweet potatoes
2 eggs
1 cup granulated sugar
1 stick margarine/butter, melted
¼ cup milk
½ cup orange juice
1 T. finely grated orange rind
1 t. vanilla
Topping:
1 cup light brown sugar, packed
1 stick margarine/butter, softened
⅓ cup all purpose flour
½ cup chopped pecans

Directions:

Souffle:
Beat eggs and add sugar.
Add sweet potatoes and melted margarine and mix.
Continue mixing while adding milk, orange juice, orange rind and vanilla.
Topping:
Mix together the brown sugar and margarine.
Then add the flour and nuts.
Spoon the sweet potato mixture into a rectangular casserole dish or pan.
Spread the topping over it.
Bake in a peheated 350º (325º if using a glass container) until hot and bubbly for approximately 30 minutes. The topping will be lightly browned.
