1 large Bermuda onion
1 cup flour
1 teaspoon salt
1 ½ teaspoons baking powder
1 egg, separated
⅔ cup milk

Directions:
Directions:
Heat oil to 365°F.

Peel and slice onion about ¼-inch thick. Separate into rings. Soak in water for 30 minutes. Drain and spread out on paper towels.

Meanwhile, beat egg yolk slightly in a bowl. Add milk and mix with dry ingredients. Stir until just smooth. Beat egg white in a separate bowl. Fold into batter.

Dip onion rings into batter, letting excess drip back into the bowl. Drop several rings at a time into the hot oil. Fry until golden brown.
