4 eggs
2 cups milk
3 tablespoons sugar
2 teaspoon salt
1 teaspoon vanilla
2 cups flour
1 pound farmers cheese

Directions:
Directions:
Mix 3 eggs and milk together. Add 2 tablespoons sugar, 1 teaspoon salt, and vanilla making sure that the batter is thin. Add more milk if needed.

Heat a 6 or 8-inch frying pan over medium heat. Brush pan with melted butter. Pour a thin layer of batter into pan. Rotate to coat. Pour out excess batter. Cook until set. Flip pancake over to set other side. Stack cooked pancakes on a plate until you are ready to fill them.

Mix the farmers cheese, 1 teaspoon salt, 1 tablespoon sugar, and 1 egg together.

Fill each pancake with a small amount of filling. Fold or roll. Fry in butter or bake in a buttered 9 by 13-inch pan until heated through.
