Baked 9" Pie Shell......................................1 Tbsp Lemon Juice
6 oz Cream Cheese....................................Pinch of Salt
2 Tbsp Milk.................................................Water
1 tsp Lemon Peel.......................................1 Cup Sugar
4 Cups Blueberries.....................................2 Tbsp Corn Starch

Directions:
Directions:
Soften cream cheese, beat in milk and lemon peel. Spread on the crust. Sprinkle 2 cups of blueberries over cream cheese layer. Mash remaining blueberries and put in a 1½ cup measure. Add lemon juice, salt and enough water to make 1½ cups. Put in a small pot. Mix sugar and corn starch and stir into pot. Bring to a boil and cook until thickened. Cool then pour on top of pie. Chill several hours before serving. Top with a dab of whipped cream if desired.
