1 lb. potatoes
½ cup chopped onion
1 large egg
½ t. salt
½ to ¾ cup oil

Directions:
Directions:
Peel and grate potatoes, transfer to a bowl of cold water.

Soak potatoes 1 to 2 minutes, drain well in a colander, and then wring out excess liquid in a towel.

Transfer potato mixture to a bowl and stir in onion, egg, and salt .

Heat ¼ cup oil in a skillet.

Spoon 2 t. of the mixture per Latke into skillet, spread each into 3-inch rounds.

Brown on one side, about 5 minutes.

Turn Latkes and brown 5 minutes more.

Transfer to paper towels to drain and season with salt. Repeat with remaining oil and batter.

Serve with applesauce and sour cream.
