2 lbs cured bacon chopped
2 cups sweet onion chopped
1 bottle Guinness beer
1.5 lbs unsalted butter
2 qts stock ( pork, chicken or vegetable)
1/4 cup black pepper course ground
12 lbs cleaned collard greens

Directions:
Directions:
1. Render bacon till almost crispy
2. Add onions and cook 2-3 minutes
3. Add Guinness and cook 3-4 minutes
4. Add butter cook 8-10 minutes
5. Add stock and pepper cook 2-3 minutes
6. Add greens and simmer on low-medium heat for 45-60 minutes
7. Reduce heat to very low and simmer for another hour
