2 Cups Flour
2 Cups Sugar
2 Teaspoons Baking Soda
2 Teaspoons Cinnamon
1 Cup Wesson Oil
4 Eggs
1 Teaspoon Vanilla Extract
3 Cups shredded Carrots

Icing:
8 Ounces Cream Cheese
½ Cup Butter
1 Box 10X Powdered Confectioner's Sugar
1 Teaspoon Vanilla Extract
1 Cup chopped nuts (optional)

Directions:
Directions:
Preheat oven to 350º

Cake:
Combine all dry ingredients
Beat in eggs one at a time
Add carrots and vanilla extract
Pour into 2 greased 9" round pans
Bake 30 minutes

Icing:
Beat all together, except nuts, until well blended
Stir in nuts if desired

I remember making this cake with my mother, but my fondest memories are making it with my son, Andrew. He made it for a church pot luck dinner once and got rave reviews.
