4 c. peeled, cut-up apples
2 c. sugar
2 c. flour
1½ tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 beaten eggs
scant ¾ c. oil
2 tsp. vanilla extract
1 c. chopped nuts

Directions:
Directions:
Mix together apples and sugar in a large mixing bowl. Set aside. Sift (twice) and measure flour, baking soda, cinnamon, salt. Add to the apples, then add eggs, oil, vanilla, and chopped nuts. Bake in a large greased and floured loaf pan. Bake at 325º for 60 minutes, then turn the oven off, and let the cake set in oven.
