2 cups cooked diced chicken
2 cups chopped celery
½ cup chopped pecans or almonds
1 cup mayonnaise or salad dressing
½ tsp. salt
2 tsp. minced onion, optional
2 tablespoons lemon juice
½ cup grated Monterey Jack or cheddar cheese
2 hard-cooked eggs chopped, optional
Top with 1 cup crushed potato chips or corn flakes

Directions:
Directions:
Combine chicken, celery, nuts, mayonnaise, salt, onion and lemon juice. Spoon into a lightly greased 1 quart casserole dish. Mix together the cheese, potato chips and eggs. Sprinkle over casserole. Cook until cheese is melted and casserole is heated through. Bake at 350º
