4 packs graham crackers
Stick oleo
2 lbs cream cheese. (4- 8 oz. Packs)
1 1/2 cups sugar
4 eggs
1 yolk only
Pinch salt
1 tsp vanilla
1 tbsp lemon juice

For bottom of cheesecake pan:

Take graham crackers and put in plastic bag. Use rolling pin and crunch up crackers. Put in cheesecake pan. Take oleo and melt. Pour into crackers and take fork and mix crackers to moisture them. Set aside.

Beat cream cheese until smooth
Add other ingredients and beat until smooth.

Pour over graham cracker crust.

Bake in water bath (put a pan of water on the rack below the one you will bake the cheesecake on)

Bake 325º approximately 60 minutes. (I stick toothpick in the middle and if firm it is done. )
