2 ½ lb cream cheese
½ cup sour cream
2 cups sugar
1 cup flour
5 eggs
dash of almond extract
1 Tbl vanilla

The secret to this cheesecake is the baking.

Put all ingredients into a mixing bowl. Beat on high speed 5-10 minutes until thick and creamy.

Now comes the hard part.

Pour the mixture into a springform pan. Place in the center of a PREHEATED 200º oven. When cake rises 1¼ inch out of the pan, open oven door, keep heat on, let cake settle.

When settled, close door, open again when cake peaks a second time. Again, open oven door, keep heat on, let cake settle. Now, close the oven door and turn heat to 375º and let it rise and brown.

The cake is done when it is ½ inch above the pan. Cool on a rack, dust with powdered sugar and serve.

Marshaltown Inn is still in West Bradford Township, PA, about 4 miles from West Chester. This must have been a favorite as it was very well preserved in the little wooden recipe box.
