1Tbsp olive oil
1c chopped red bell pepper
1 c chopped Zucchini
1 c chopped yellow squash
1c sliced mushrooms
3/4 c chopped red onion
1/4 tsp salt
6 8 inch whole-wheat tortillas
2 1/4 c shredded sharp cheddar cheese- 9 oz
Sour cream and salsa- optional

Directions:
Directions:
Heat oil in a lg pan over medium high heat. Add red pepper, zucchini, squash, mushrooms, onion and salt. Cook, stirring occasionally, until just tender, about 7 minutes. Remove from pan.
Coat pan with cooking spray. Lay 1 tortilla in pan and sprinkle evenly with 1/2 cup of cheese. Spread with 3/4 c vegetable mix, then sprinkle with 1/4 c cheese. Top with another tortilla; cook until golden on both sides, 2-3 minutes per side. Repeat with remaining ingredients. Cut each quesadilla into 6 triangles. Top with sour cream and salsa if desired.

Might want to add cilantro or substitute other vegetables. Could also add black beans and serve with guacamole.
