2 cups sugar
1 cup light syrup
½ cup water
¼ teas salt
4 Tbsp butter
2½ cups raw peanuts
2 teas vanilla
1 teas baking soda

Directions:
Directions:
Mix together sugar, water, syrup, salt and butter. Bring to a boiling point, stirring to keep from boiling over. (USING A CANDY THERMOMETER) When it reaches a soft ball stage, add the raw peanuts and cook until it turns caramel brown, stirring often to keep from burning. Continue to cook to a brittle stage. Remove from stove and stir in the vanilla and soda. Spread on 2 buttered cookie sheets. When cool break into pieces.

I love peanut brittle. My mother got this recipe out of the Mormon Cookbook. It is the one she makes for our family all the time.
