1 fryer in quarters
˝ pint olive oil
onions
1 button of garlic
6 oz. tomatoes
1 ˝ quarts chicken broth
1 bay leaf
2 Tablespoons salt
1 pound rice
pinch of saffron
1 chopped green pepper
Petit Pois (small green peas), optional
pimento, optional

Directions:
Directions:
Fry chicken quarters in oil with onions and garlic. Add tomatoes and broth. Boil for 5 minutes. Add bay leaf, salt, rice, saffron and green pepper. Stir thoroughly. Place in moderate oven for 20 minutes. Garnish with peas and pimento.
