4 pork blade steaks (½-¾" thick)
¼ teaspoon black pepper
10 ½ oz. can cream of mushroom soup

About 1 hour before serving, trim piece of fat from a steak. In 12" skillet over medium-high heat, rub piece of fat over bottom of skillet. Discard fat. Add steaks and cook until browned on both sides. Sprinkle steaks with pepper. Add undiluted soup. Reduce heat to low, cover and simmer for 45 minutes. Serve sauce with steaks. May substitute celery or tomato soup. I like to use 2 mushrooms or a mushroom and celery with a little water for extra sauce. Very good when served with rice.

To oven-braise: Instead of simmering, cover skillet and bake 45 minutes at 325º.
