1 ½ cups flour
1 teaspoon baking powder
¼ teaspoon salt
1 egg
1 cup milk
2 pounds fresh shrimp

Directions:
Directions:
Mix together flour, baking powder and salt. Beat egg and add milk. Beat wet and dry ingredients until smooth. Dip shrimp in better. Fry in shallow oil, heated to 375º for 2-3 minutes or until brown. Drain and serve.

This is a heavy batter and over the years we used less flour and more milk to make it lighter. We also prefer to add about 2 teaspoons sugar to the batter.
