2 (8 oz.) packages cream cheese
1 (8 oz.) can crushed pineapple, drained
2 cups chopped pecans
¼ cup finely chopped green pepper
2 Tablespoons finely chopped onion
1 Tablespoon seasoned salt

Directions:
Directions:
Whip cream cheese until smooth. Add pineapple, 1 cup pecans, green pepper, onion and salt. Refrigerate until chilled, about 1 hour. Shape into ball and roll in remaining 1 cup pecans. Wrap in foil or plastic wrap. Refrigerate until well chilled or overnight. To serve, place on tray and garnish with parsley, pineapple slices and cherries. Surround with crackers.

I discovered this recipe in 1975 while working at Nederland High School. It's been a family favorite and crowd pleaser ever since.
