Half of One Yellow, Red and Orange Pepper Diced
One Small Onion Dice
1 Glove of Garlic Minced
1 Cup of Cook and Drain Frozen or Fresh Spinach
Few Sprigs of Fresh Tarragon
1 Tablespoon of Grape seed Oil or Vegetable Broth
2 cups of Cook White Rice
1 Teaspoon Salt
1 Teaspoon Fresh Ground Pepper

Cook the white rice set aside,
Cook the spinach drain set aside.
In a pot add 1 tablespoon of grape seed oil or vegetable broth
Sauteed until soft the red, yellow, orange peppers, onions and garlic
Add the rice to the cook peppers, onions and garlic mix well
Add the cook spinach mix well cook for 15 minutes
Season with 1 teaspoon of salt and fresh ground pepper
Finish it off with few sprigs of fresh tarragon

Always looking for way to perk up white rice.
On this particular day I had plenty of pepper in hand.
I decided to be a little creative in the kitchen.
Invited a few friends to get their opinion and it was a hit.
This end up being one of our family and friends favorite rice dish.
