1 cup balsamic vinegar, 3 cups plum tomatoes (seeded and chopped), 4 tbsps. finely chopped shallots,
2 tbsps. minced fresh basil, cup olive oil, 3 garlic cloves (minced), 2 loaves French Baguette,
sea salt, grated Parmesan cheese

Directions:
Directions:
1. In a saucepan, bring vinegar to a boil; cook until liquid is reduced (8-10 minutes). Remove from heat.
Combine tomatoes, shallot, basil, 4 tsp. olive oil and garlic. Cover and refrigerate until serving.

2. Brush remaining oil over both sides of baguette slices. Grill, uncovered, over medium heat until golden brown on both sides.

3. Top toasts with tomato mixture. Drizzle with balsamic syrup, sprinkle with salt and Parmesan.
serve immediately
