13 lb watermelon cut into 1 1/2 in triangles
1/2 c fresh mint
1/4 c thinly sliced red onions
12 oz halved cherry or grape tomatoes
2 Tbsp olive oil
2 Tbsp fresh lime juice
1tsp pure honey
Kosher salt to taste
Black pepper to taste
Crumbled feta cheese

Directions:
Directions:
Remove the rind from the watermelon and cut into 1 1/2 in triangles and arrange on a platter.
Top with mint, onion, and tomatoes.
Combine olive oil, lime juice, honey, salt and pepper in a bowl. Spoon over watermelon, top with crumbled feta.
