Pecan Pie Recipe

1 c. dark karo syrup
¾ c. sugar
1 cube butter, melted
3 extra-large eggs, beaten
1 tsp. vanilla extract
¾ c. whole pecans (for the top)
¾ c. chopped pecans
9” pre-baked pie shell

Directions:
Directions:
Preheat oven to 325º. Evenly spread the chopped pecans over the bottom of the pie shell. Mix the syrup and sugar. Add in the melted butter and stir well. Add eggs and vanilla extract. Mix well. Let the mixture rest for 1 hour in the bowl. DO NOT stir before putting into pie shell. Top with the whole pecans (they will not sink - can make a fancy design). Bake for 45-50 minutes.

Rosemary was a good family friend of Mom and Dad’s. They played golf together, and fished out on the delta in Rosemary’s boat. I remember trips down the river to collect blackberries from the boat that were growing on the riverbank.
